Healthy Coconut Cilantro Lime Rice

This coconut cilantro lime rice is the most fragrant, aromatic side dish!

Ingredients:

– Coconut oil – Garlic – Ginger – Brown rice – Coconut milk

Place the oil in a medium saucepan set over medium heat. Swirl to coat the bottom surface of your saucepan and add the garlic and ginger.

Sauté for 30-60 seconds, mixing continuously, to prevent the ginger and garlic from sticking to the bottom of your pan.

Add the rice and sprinkle with 1/4 teaspoon of salt, mix to combine with the garlic and ginger. Continue to toast the rice for 1-2 minutes, stirring continuously, to prevent sticking or burning.

Add the coconut milk and broth to the rice. Increase heat to high and bring to a low boil. Once boiling, immediately cover and reduce heat to low.

Simmer until all the liquid evaporates, about 35-45 minutes. Remove from heat, and keep covered for 10 more minutes.
