Healthy Butternut Squash Apple Cranberry Casserole

This Healthy Squash Casserole is the perfect easy side dish to serve for any weeknight or holiday meal.

Ingredients:

– Butternut squash – Apples – Cranberries – Maple syrup – Coconut oil

Preheat the oven to 350°F. Peel the squash and apples. Once peeled, cut the squash in half, remove the seeds and dice it into one-inch cubes. Next, thinly slice the apples.

In a large mixing bowl, mix together the squash, apple slices and cranberries.

Add in the maple syrup, coconut oil, tapioca, cinnamon, salt, and nutmeg and toss to evenly distribute.

Place butternut squash mixture in an ungreased 7×11 inch baking dish (or a large rectangular baking dish) in an even layer.

Cover with foil and bake casserole in the preheated oven for 35 minutes; then toss to ensure all components are cooked evenly. Place back in oven, and bake for an additional 30-35 minutes.
