Grape Quinoa Salad with Spinach and Almonds

For a quick, healthy meal the whole family will love, you've got to try this delicious grape quinoa salad!

Ingredients:

For the salad: – Quinoa – Water – Almonds – Baby spinach

Cook quinoa according to package directions. You can use broth instead of water for more flavor. Allow to cool.

Place a frying pan over medium heat. Add the sliced almonds. Toast for about 5 minutes or until fragrant and lightly browned, ensuring that you toss them frequently to prevent burning.

In a small bowl or jar, combine the ingredients for the dressing.

Transfer the quinoa to a large bowl and toss with almonds, spinach, scallions, grapes and desired amount of dressing.

Mix until well combined. Season with salt and pepper, to taste.
