Easy Instant Pot Pumpkin Soup

Make a super tasty Fall soup in less than 30 minutes with this easy Instant Pot Pumpkin Soup recipe.

Ingredients:

– Olive oil – Onion – Garlic – Ginger – Red curry paste

Turn on the SAUTE function and wait for the  to say “HOT.” Add the oil. Once it’s simmering, add the diced onion and saute for 2 minutes, stirring occasionally.

Add the garlic, ginger and red curry paste and saute for an additional 30 seconds.

Turn off the saute function and add the rest of the ingredients other than the coconut milk. Stir to combine.

Close the lid and seal the valve. Set into HIGH-PRESSURE and cook for about 10 minutes. Use an immersion blender to puree the soup until smooth and creamy.

Stir in coconut milk and add salt and pepper to taste. Garnish with additional coconut milk and cilantro if desired.
