Creamy Coconut Shrimp Dinner

This creamy coconut shrimp dinner is one tasty meal that's ready to serve up in less than 30 minutes.


– Extra virgin olive oil – Bell peppers – Scallions – Garlic

In a large skillet, heat oil over medium-high heat. Add red peppers and sauté until they start to soften. Add scallion whites, garlic and red pepper flakes. Cook for 1 additional minute.

Add tomatoes, coconut milk, red curry paste, soy sauce and cilantro. Simmer uncovered on low for about 10 minutes. The sauce should thicken slightly.

Add shrimp in a single layer to the creamy coconut sauce so that it’s fully immersed and cook for 1-2 minutes.

Add lime juice and season with salt and black pepper, to taste.

Serve on a bed of brown rice or quinoa and garnish with remaining green onion and additional cilantro or parsley, if desired.
