For The Herb Rub – Rosemary – Thyme – Salt – Black pepper – Garlic – Olive oil
In a small bowl, mix together the fresh rosemary and thyme along with the salt, pepper, garlic and teaspoon of olive oil. Pat the beef roast dry with a paper towel. Preheat the oven to 425℉.
Heat a large heavy, oven-proof skillet over medium-high heat. Drizzle the hot pan with olive oil, and sear the beef roast for 3 minutes on each side to a rich golden brown.
