I live for summer produce and love serving it as much as possible throughout the season. This Greek Cucumber Noodle Salad is a regular feature on my summer menu (and all year round) because it’s so simple to make and incredibly satisfying!
With refreshing cucumber noodles and tomatoes, salty feta and olives, it’s the perfect side dish to serve up when the warmer temperatures arrive… and totally crave-worthy too!

Salad Ingredients
- Cucumbers: You can use any type of fresh cucumbers, but make sure they are burpless to avoid any bitterness. I prefer to use English cucumbers as they fit in the spiralizer nicely and make long noodles!
- Diced tomatoes: Use any type of fresh tomatoes you like. I usually use cherry tomatoes, but you can use grape tomatoes, heirloom tomatoes, or whatever tomatoes you have on hand.
- Olives: For that classic Greek flavor, I recommend using kalamata olives. If you have another variety you prefer, feel free to use those instead.
- Red onion: To add crunch and a little heat.
- Feta cheese: The salty, creamy flavor of feta cheese is the perfect complement to the fresh vegetables.
- Homemade Greek salad dressing: This simple vinaigrette can be made ahead of time for easy salads all week long. My recipe is made with olive oil, red wine vinegar, lemon juice, oregano, garlic, and salt and pepper. That’s it!
How do you make cucumber noodles?
It’s easy! Simply grab an English cucumber and slice off each of the ends since a flat base is best to work with when spiralizing vegetables.
Cut the cucumber in half to prevent the strands from being too long and insert the cucumber between the blade and the pointy end of the handle of your spiralizer.
Next, turn the crank and watch your cucumber transform into delicious vegetable noodles! It’s actually pretty fun once you get started.
My favorite spiralizer to use is the Paderno Spiralizer. I’ve had this thing for years now and it hasn’t failed me yet. In fact, it’s produced some pretty tasty veggie creations!
How to Make Mediterranean Cucumber Salad
- In a medium bowl, whisk together olive oil, lemon juice, vinegar, oregano and garlic. Season with salt and pepper, to taste.
- Add the cucumber noodles, diced tomatoes, red onion, feta cheese and olives to a large bowl.
- Add the desired amount of dressing and toss to combine (I only used half the dressing). Enjoy!
Expert Tips
- Cut cucumbers in half before spiralizing to make the spiralizing process easier and to shorten the cucumber noodle strands. You may also wish to cut the strands in half with kitchen scissors or break up with your hands as you go to prevent them from being too long.
- If you don’t own a spiralizer, you can also thinly slice the cucumbers using a sharp knife or mandoline slicer.
- If you want to get rid of excess water in the cucumber noodles, place them in a wire mesh strainer and sprinkle them with a little bit of salt to help draw out some of the excess water. This can help prevent soggy noodles! I do this step if I have time, but it’s not 100% necessary. The salad is still delicious even if you choose to skip this step!
Recipe FAQs
The easiest (and least stressful) way to spiralize cucumbers is to use a spiral slicer. We use ours so much that it’s worth it to have on hand all year long. But, if you aren’t sure about buying one, you can get a similar effect by slicing the cucumbers into long noodles with a sharp knife or using a mandoline slicer. These methods aren’t quite as straightforward as using the spiral cutter, but you’ll get a similar effect.
Both of these veggie-based noodles are eaten as a low-carb, high-fiber alternative to regular pasta, but they’re generally served in different ways. Although you can eat zucchini noodles raw, most people prefer to cook them, so you’ll see them served warm with pasta sauce, etc. Spiralized cucumbers, on the other hand, are generally eaten raw in salads as cucumbers lose their texture when heated.
Yes, and this can be helpful! Cucumbers are very high in moisture and once they’re added to a salad, they often become wet and watery. If you spiralize the cucumbers ahead of time, you can place them in a strainer, sprinkle them with a little salt and let them weep off the extra moisture. Once prepared, the spiralized cucumber noodles can be stored in an airtight container or plastic bag in the fridge for 2-3 days.

I swear, you could eat this salad with just about anything or even by itself, but it tastes especially good paired with the following options:
- Grilled chicken (marinated in one of these healthy chicken marinades)
- Turkey Zucchini Burgers
- One Pan Chicken Drumsticks and Potatoes
- Sheet Pan Chicken Pitas
- Chicken Caprese Burgers
- Pesto Chicken Burgers
- Falafel Bites on a pita with hummus
Recipe Variations
- Add more veggies: This spiral cucumber salad is already such a veggie-rich dish, but you can certainly add more! Consider adding some diced bell peppers, chopped green onions, marinated artichokes, or roasted red peppers for extra flavor.
- Add some heat: Since fresh cucumber is so cooling and refreshing, I often like to serve it with a little kick of heat. Add red pepper flakes to taste.
- Use store-bought vinaigrette: I promise you that it’s super easy to make your own dressing at home. But if you’d prefer to use a store-bought balsamic vinaigrette, Greek or Italian dressing, those can be really handy in a pinch!

Spiralized Greek Cucumber Noodle Salad
Ingredients
For the Dressing:
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 2 teaspoons fresh lemon juice
- 2 teaspoons fresh oregano minced (or sub in 1/2 tsp dried oregano)
- 1 garlic clove minced
- 1/4 teaspoons each salt and pepper
For the Salad:
- 2 English cucumbers spiralized*
