- Simple ingredients: This recipe requires only a few basic ingredients, most of which you probably already have on hand.
- Easy clean up: Because this recipe is made on a sheet pan, the clean up is minimal. Isn’t that the best type of meal? Sheet pan dinners are the best!
- Healthy recipe: This simple tray bake is a complete meal, consisting of protein, complex carbohydrates, healthy fats and nutrient-rich vegetables! It’s low effort, high reward!
Ingredient Notes

- Sausage: I use Italian pork sausages for this dish since we like the flavor, but you can use whatever sausage you like. For a lower-fat meal, use reduced-fat sausages or choose a lean protein, like turkey or chicken.
- Sweet potatoes: Rich in beta carotene, vitamin C, B6, potassium, and fiber. You can also sub in butternut squash if desired.
- Broccoli: Broccoli is such a great veggie to include in your diet as it’s a good source of fiber, vitamin C, vitamin K, iron, and potassium. Feel free to add some other vegetables in addition to the broccoli if you want more color and diversity in your meal.
- Oil: For drizzling over the sausage and veggies to help them get crispy on the outside. I like to use olive oil, but canola will work well too.
- Seasonings: Garlic powder, Italian seasoning, salt and black pepper are used to season this recipe. Feel free to add more or less seasoning depending on your personal taste preferences.
Step-by-Step Instructions
- Pre-heat oven to 425 degrees F.
- Add the sliced sausage, chopped broccoli and sweet potato to a large sheet pan (you’ll probably need two).
- Drizzle with olive oil and sprinkle with the garlic powder and Italian seasoning. Season with salt and pepper.

- Toss sausage and veggies with your hands until they are fully coated with olive oil and spices.
- Bake for 20-25 minutes, or until sweet potato is tender, flipping halfway through. Serve warm.

Expert Tips
- Make sure that the sweet potato is diced small enough. If the chunks are too big, they will require longer cooking time. If you use different veggies, you may need to extend the cooking time since sweet potatoes cook so quickly.
- Slice the sausage when it’s still partially frozen to make it easier to cut. If the sausage is too soft, the sausage may start to come out of the casing when you’re cutting it into pieces. It’s much easier to cut when it’s firm. You can also leave the sausages whole if short on time.
- You can purchase pre-chopped broccoli florets and sweet potato to save time chopping if tight on time.
- If I’m in a rush, sometimes I don’t even measure out the olive oil and spices; just sprinkle it on until the sausage and veggies are well coated.
- For easy clean up, line your roasting dish with parchment paper.
Recipe FAQS
You can use any kind of sausage that you like for this recipe. I like the flavor that Italian sausage provides since it adds a bit of a spicy kick, but regular pork sausages or chicken or turkey sausages all work well.
You can also make this a meatless meal by using vegetarian sausages.
I love the combination of the broccoli and sweet potato in this veggie sausage tray bake, but you can use all kinds of different veggies.
Try it with:
Red or green bell peppers
Carrots
Zucchini
Butternut Squash
Asparagus
Sliced onions
Cauliflower
Fresh garlic cloves
Cherry tomatoes
Potatoes (especially baby potatoes)
Parsnips
Green beans
The variations are limitless, so it’s is a great meal idea to use up any veggies you have in the back of your fridge!
Although you can freeze the leftovers, raw veggies won’t crisp up quite as well after freezing. Since this recipe is so quick to make, it’s best to make a fresh batch.

How to Store
If you have leftovers, they will keep well in an airtight container in the fridge for up to four days. It’s a great recipe for weekly meal prep for quick and easy lunches the next day!
How to Reheat
To reheat this dish, place the sausage and veggies onto a baking sheet in the oven preheated to 350F. Bake for 15 minutes or until heated through. For a meal on the go, store the leftovers in a microwavable container and microwave for 3-4 minutes or until fully heated through.
Recipe Variations
- Adjust the seasonings: Use other dried herbs such as, oregano, rosemary, thyme, or red pepper flakes for heat. Garnish with fresh herbs, like fresh thyme or parsley, for extra flavor.
- Try different proteins: Feel free to use any type of sausages you prefer. Any will work, including raw sausages and pre-cooked ones!
- Play around with veggies: Like I mentioned earlier, this sausage traybake can be made with many different types of veggies! If you can roast it, you can use it here.
- Make a sauce: Everything tastes better with a nice gravy! Try pairing this dish with homemade chicken gravy made by thickening chicken broth with flour and butter on the stove. The sharpness of mustard is a nice match, too. Try serving a little honey mustard sauce or wholegrain mustard to dip the roasted veggies.
