Kodiak waffles, but better!
Lately, we’ve been on a roll testing out recipes with our newly discovered Kodiak waffle mix!
First up, we had these delicious Kodiak Cake Blueberry Muffins, and our next recipe experiment were these Kodiak Protein Waffles with banana and chocolate chips!
Similar to the muffins, these kodiak cake waffles are loaded with whole grains and protein for the perfect satisfying and healthy breakfast, snack or treat!
Now, you can of course make these waffles according to the box instructions, but I’ve levelled them up with some wholesome and tasty ingredients to make them extra yummy, thick and fluffy!
The best part is, it’s such an easy recipe to make.
Simply toss the ingredients in a blender, whip up the batter and cook it in the waffle iron until golden and crispy!
I recommend making up a big batch and enjoying them throughout the week for a quick breakfast. They’re so handy for weekly meal prep!

Why we love these banana protein waffles
- Energizing: Made with whole grain flour, eggs, banana, chia seeds, and Greek yogurt, this is the true definition of power waffles. They’re packed with fibre, protein and healthy fats and only contain 4 grams of sugar per serving to keep you feeling energized throughout the day. The ideal breakfast!
- Make-ahead: These waffles keep well in the fridge and can be frozen too. I love the mornings when I can toss these waffles in the toaster for an easy breakfast for the kids!
- So delicious: Healthy doesn’t mean boring! These banana waffles have a wonderfully light and fluffy texture, and when loaded up with tasty toppings, are so irresistible!
Ingredient notes
- Kodiak mix: I used the Kodiak Cakes Power Cakes Flapjack and Waffle Mix to make this recipe.
- Chia seeds: Chia seeds are a nutrient-dense add-in that provides additional fibre, protein, omega-3s, antioxidants and minerals. They also help to thicken up the batter slightly for thicker waffles.
- Baking powder: To make the waffles rise and get extra fluffy.
- Seasonings: Salt and vanilla extract add additional flavour to the waffles.
- Milk: You can use dairy or plant-based milk such as unsweetened almond milk, oat or soy milk for this recipe.
- Greek yogurt: The yogurt adds extra moisture and additional protein as well. I typically use 0% fat plain Greek yogurt. You can also sub in cottage cheese if desired.
- Eggs: To bind the ingredients together and incorporate extra protein.
- Banana: Use an overripe banana. It will be easier to combine with the other ingredients and is naturally sweeter.
- Coconut oil: This adds extra moisture and helps the waffles to get crispy on the outside while cooking.
- Chocolate chips: These are optional, but make a delicious add-in. Use mini or regular sized chocolate chips if you choose to add them in.
How to make kodiak cakes waffles – step by step instructions
- Preheat waffle iron and spray with cooking spray.
- Place all ingredients (except the optional chocolate chips) into a high speed blender and mix on high until completely smooth.
- Allow the batter to sit for 5 minutes. If the batter is too thick after 5 minutes, add a little more milk. Stir in chocolate chips, if using.
- Pour about 1 cup of batter onto the waffle iron (the amount will depend on the size of your waffle iron). Cook waffle until golden brown. I cook mine at setting #2 for about 5-6 minutes, however you can adjust cooking time depending on how crispy you like your waffles.
- Repeat until all of the waffle batter is used up.
- Top with desired toppings.
Serving Tip: I like to serve these waffles with additional banana slices, a drizzle of peanut butter, chopped walnuts, a sprinkle of chocolate chips and a bit of maple syrup. So delicious!

Protein waffle Recipe Tips
- Use overripe banana: For best results, use a very ripe banana as it will lend more sweetness and a better flavour to the waffles.
- Scrape down sides: Once you’ve started blending the mixture, be sure to use a spatula to scrape down the sides and lift any of the kodiak cakes mixture that might be sticking to the bottom of blender. This will help ensure that all of the ingredients are evenly distributed and that there are no clumps of flour throughout the mixture.
- Adjust batter consistency according to personal preference: If you prefer thicker waffles, add a bit of extra kodiak cakes mix. If you want a thinner batter, add a bit of extra milk until desired consistency is reached.
- Cooking waffles: I typically cook my waffles on heat setting #2 for 5-6 minutes until they’re golden and lightly crispy on the edges. If you prefer crispier waffles, you can turn the heat up a bit or cook them for a bit longer.
- Waffle quantity may vary: The number of waffles the recipe makes will depend on the size of your waffle maker. I use the Cuisine Art Belgian Waffle Maker and get 2 1/2 large waffles or 10 smaller 4-inch waffles from the batter.
- Nutrition info: The nutritional information is an estimate based on one small 4-inch waffle. The size of your waffle (and the corresponding nutrition facts) will depend on your waffle maker.
Storage and reheating guidelines
Refrigerator: The cooked waffles will keep well in the fridge for up to 3 days. Let them cool before storing in an airtight container.
Freezer: You can freeze leftover waffles for up to 3 months. Store them in a freezer safe bag or container with the layers separated with parchment or wax paper to prevent them from sticking together.
How to reheat: Whether the waffles are being reheated from the refrigerator or a frozen state, you can pretty much reheat them the same way. Pop them in a toaster or toaster oven until warmed through and slightly crispy.
You can also reheat them in the microwave for a minute or so, but they won’t be as crispy.

You can typically find the waffle mix at your local Costco, sometimes Walmart or online here. Some grocery stores carry it as well, so be sure to check your local supermarket. Look for the box with the grizzly bear.
The Kodiak cake mix is made with whole grain whole wheat flour and oat flour so it’s a healthy alternative to your typical waffles. It also contains more protein (with 14 gram of protein for 1/2 cup of the dry mix), fibre and less added sugar and calories than a lot of other waffle and pancake mixes, making it a lighter, more nutrient-dense option. I like to incorporate additional ingredients like banana and chia seeds for an even more power-packed breakfast.
One small 4-inch waffle contains 8g of protein. If you have two small waffles as a serving, that’s 16 grams of protein. Tough to beat these high protein waffles!
No, the Kodiak waffle mix is made with whole grain flour which contains gluten. Some of the kodiak cakes mixes are gluten-free, so be sure to check the label if you’re looking for a gluten-free option.
No, the kodiak mix contains milk products such as whey protein concentrate and milk protein concentrate in addition to buttermilk. The waffle recipe also contains eggs and Greek yogurt, so they’re not suitable if you’re following a vegan diet.

Toppings for waffles
These Kodiak protein waffles are great served by themselves, but like most waffles, taste even better with all your favourite toppings!
Try them with:
- Sliced banana
- Drizzle of nut butter
- Maple syrup
- Chopped walnuts or pecans
- Chocolate chips
- Whipped cream
- Fresh or frozen thawed berries
- Other fresh fruit of choice
- Cream Cheese Crepe Filling (it’s delicious on waffles too!)
Recipe variations
- Switch up the flavour: I like to add a little vanilla extract, but you can skip this or try a different flavouring like almond or maple extract.
- Change the add-ins: Swap the chocolate chips for blueberries.
- For even more protein: Use liquid egg whites instead of the eggs. You can also try adding a bit of protein powder as well.
- If you don’t like banana: If you’re not a fan of bananas, try subbing in about 1/3 cup applesauce, pureed pumpkin or sweet potato.
- Make pancakes instead: You can also use this recipe as a protein pancake mix to make pancakes instead of waffles.

Ingredients
