Broccoli Cheddar Quinoa Cups

Looking for a new way to try out quinoa? These broccoli cheddar quinoa cups are a cute and healthy snack, appetizer or side that the whole family will love! A great recipe for lunch boxes, snacks and baby-led weaning! {Gluten-free & vegetarian}
Serves: Makes approximately 40-45 mini cups
  • 3 cups cooked quinoa (about a ¼ cup dry)*
  • 2 cups finely chopped broccoli
  • 1½ cups shredded cheddar cheese
  • 2 eggs, beaten
  • 1 garlic clove, minced
  • ½ tsp each onion powder and paprika
Optional add-ins:
  • ¼ tsp salt
  1. Preheat oven to 350 degrees F.
  2. Mix cooked quinoa, broccoli and cheese together.
  3. In a smaller bowl, beat eggs, garlic, onion powder and paprika (and salt, if using).
  4. Add to quinoa mixture and mix until incorporated.
  5. Spray muffin tin with cooking spray or use silicone muffin tin.
  6. Divide mixture evenly among mini muffin cups, pressing down with a spatula to pack down. Bake for 15 minutes. Allow to cool for several minutes before removing from muffin tin to allow the quinoa to set.
* I recommend cooking the quinoa in no-salt added vegetable or chicken broth to incorporate more flavour
