Vegan Rainbow Falafel Wrap
These vegan rainbow falafel wraps are packed full of colour, flavour and nutrients! Whip up a batch of falafels ahead of time and assemble these wraps throughout the week for a quick, easy and healthy meatless meal! Vegan, dairy-free, & gluten-free.
Serves: Makes 4 servings
  • 4 large (10-inch) whole-wheat tortillas (can use gluten-free if desired)
  • 4 tbsp. hummus, store-bought or homemade
  • Large handful baby spinach
  • ½ avocado, thinly sliced
  • 1 cup shredded beets
  • 1 cup shredded carrot
  • 8 falafels (crumbled)
  • 8 toothpicks
  1. Divide hummus evenly and spread across each of the four wraps, leaving about an inch around the edge.
  2. Starting from the left of each wrap, add a strip of baby spinach, sliced avocado, shredded beets, shredded carrot and two crumbled falafels. Roll the wrap tightly, ensuring that all the ingredients stay in the wrap.
  3. Secure with toothpicks and slice wrap in half. Serve and enjoy!
